1lb. browned ground beef cooked with small chopped onion
1 cup thawed frozen mixed veggies
1 can cream of mushroom soup
1 can milk
1 cups shredded cheddar cheese
1 small pack of tator tots
preheat oven to temp. on back of tator tot bag. Mix, browned ground beef mixture in with veggies and mushroom soup and water and spread in 9x13in. pan. sprinkle with cheese and top with tator tots.. cook per time to cook tator tots on back of tator tot bag.
*Can substitue mushroom soup with cheddar cheese soup and eliminate the shredded cheese
*I also use worshtishire sauce to flavor the meat more.

Some of our favorite casserole recipies are off the Bisquick box. We love the Chicken Salsa Casserole and the Hamberger Pie Casserole.

Company Chicken Casserole
This weird combination of ingredients turns into a really yummy meal!
3 cups chopped chix breasts, cooked
1 (6oz) Uncle Ben's Long Graina nd wild Rice, cooked according to box instrucitons
1 med onion, chopped
2 (15oz) cans of French style green beans
1 c lowfat mayo
1 (8oz) can of water chestnuts
6 oz shredded cheddar cheese
Place all ingredients in a large bowl and mix well. Place in a sprayed baking dish (I use a 2 1/2 qt round, but 9x13 works well too). Bake uncovered 25-30 minutes at 350 deg (325 for glass pans)
*You can make this a few hours ahead of time (I make it in the morning to pop in the oven at night) and refrigerate
*You cannot freeze these leftovers
*serve with: mixed fruit in jello, or mixed with vanilla yogurt, and refrigerated biscuits
*you can garnish this with slivered almonds if you wish
Creamy Potato Ham Casserole
1 (32oz) bag of frozen hash brown potatoes, thawed (I use the "southern style" cut)
1 stick of butter, melted
1/4 c onion, finely chopped
1 (10oz) can cream of Chicken soup
1 (16oz) carton of sour cream
8 oz shredded cheddar
1-2 lbs ham, cut into 1/2" cubes
1/3 can bread crumbs
Mix all ingred, except bread crumbs in a very large pan and mix well. Place in a 9x13 baking dish, top with breadcrumbs. Bake uncovered 1 hour at 350 deg (325 for glass dishes)
We eat this for breakfast a lot. Use 1 lb ham for breakfast version, 2 lbs for dinner.
*Any of the full fat ingredients can be substituted for lowfat or fat free
*You can make this recipe a day ahead, refrigerate, and let stand room temp for 30 min before baking
*You can freeze the leftovers
*I like to serve this with orange segments, or fruit salad for breakfast. Broccoli and corn muffins for dinner
*dh likes french fried onions on his (the Durkee kind that you make green bean casserole with at the holidays)

Hey- hope this makes sense. I got this from a friend of mine... A GREAT HIT!
1 pkg. taco seasoning
4 large chicken breasts, skinned & boned
1 28 oz. can green enchilada sauce
1 10 oz. bag frozen corn
1 16 oz. tub sour cream
1 7 oz. can chopped green chiles
1 pkg. corn tortillas
1 pkg. shredded cheese, Mexican blend
- In large skillet cook chicken with taco seasonings and water (according to directions on packet). Tear chicken into bite-sized pieces as you cook (this gets the chicken moist and flavorful). Set aside.
- Mix together enchilada sauce, frozen corn, sour cream, and chopped chiles in a bowl. Set aside.
- In a casserole dish, assemble like a lasagna:
1.) sauce on bottom of casserole dish
2.) torn strips of tortillas
3.) chicken
4.) sauce
5.) cheese
**Repeat! You should have about 3 layers, with cheese at the top.
Bake at 350º until bubbly (about 30-40 minutes).

Ok, we had this one last night and it was a huge hit for everyone:
Pizza Casserole
1 lb ground beef
meat pizza topping of your choice: lg package of pepperoni, 1/2 lb cooked sausage
1/2 c green pepper
1/2 c onion
14 oz jar pizza sauce
2 c mozzarella cheese
3/4 c skim milk
3/4 c Bisquick
2 eggs, beaten
cook ground beef, drain. Layer in a 9x13 pan in this order: beef, meat pizza topping, green pepper, onion, pizza sauce, cheese. In small bowl mix milk, Bisquick, and eggs until smooth. Pour over layered ingredients. Bake at 400 deg for 40 minutes
You can prepare this the day before, but don't put the Bisquick mix on until right before baking. Let layered ingred. sit at room temp for 30 minutes before baking if you do this.
We served this with salad and breadsticks. Sometimes garlic bread. Kids think it is pizza, and adults don't have to eat yet another pizza!

Easy Peasy Chicken Caserole (love this because it only messes up 2 dishes)
2 large or 3 medium chicken breasts
1 can cream of mushroom soup
1 small can mushrooms
1 can veggie of your choice (corn, green beans, limas, veg-all, etc)
1 box Stovetop Stuffing (I prefer the Herb one)
Chop chicken into bite sized pieces and line bottom of caserole dish with it
Drain cans of mushrooms and veggies, and spread evenly over chicken
Spread cream of mushroom soup over veggies
Pour stuffing into a seperate bowl and add 1 cup hot water, toss till evenly moise
Spread stuffing evenly over other ingredients.
Put lid on dish (or cover with tin foil) and bake at 350 for 45m-1hr
Yum!

Breakfast Casserole, (but it good any time really)
1 can of Crescent rolls
2 cups of shredded hash brown potatoes
1/2 c chopped green pepper (opt)
6 eggs beaten
salt and pepper to taste
1 lb cooked and crumbled sauasage (or ham or bacon)
2-1/2 c shredded cheese (cheddar, jack, mozz, or combo whatever you like)
1/2 c chopped onion
1/4 c milk
Unroll crescent rolls into bottom of 9x13 pan, press perforations together. Top w/ meat, hash browns, 1-1/2 c cheese, onion, green pepper. Combine eggs, milk, salt and pepper. Pour over top of casserole. Sprinkle w/ remaining cheese. Bake at 375 for 30-35 min, or until eggs are set.
Very yummy. We have this every year at Christmas.

Itailan Leftover Casserole
Some Leftover pasta-it is best if it is a "shaped" pasta, not spaghetti (like 1/2 a box)
Tomato Sauce
Sliced Peppers, Onion, Tomatoes, Cauliflower, really whatever veggies you have on hand
1 Pound of meat and beans-i save leftover ground beef, sausage, chicken and maybe add a can of cannolini beans
Mozzeralla Cheese
Mix everythig but the cheese up right in a greased casserole dish. Sprinkle with a generous amount of cheese and bake in a 350 over until heated through and cheese is melted and lightly brown. Serve with some nice itailan bread.
Can you tell i am not a measurer? This is why i don't noramlly try to translate my recipes, but my family really likes tis one. I usually make it a couple days after makeing sausage and peppers. Also, fo the ground beef, i usually cook up 2 lbs at a time when i am making something and freeze one lb, so i have some already cooked when i need it.

MamaMer, I made the Company Chicken casserole a couple nights ago and everyone loved it! Honestly, I was skeptical and planned not to eat dinner because I don't like mayo OR water chestnuts but once I tasted it I couldn't stop eating it LOL
Even the kids ate it! DS always leaves his green beans on his plate, but he ate his dinner and never complained. DD ate the water chestnuts when she thought they were "crunchy potatoes" but when I corrected her and told her they were water chesnuts she started to push those to the side. DH actually asked me to put the ingredients on our new shopping list so I can make it again.

Magnificent Casserole (Yes, it really is)
2 pounds Lean Ground Beef
8 ounces Cream Cheese
1 tablespoon Green Pepper -- minced
1/2 cup Sour Cream
1/2 cup Swiss Cheese -- grated
8 ounces Egg Noodles -- (package)
1 pound Cottage Cheese
1/3 cup Green Onion -- chopped
2 cups Tomato Sauce
In a large pan, cook noodles in boiling, salted water until tender. Drain & set aside. In a large bowl, mix together cream cheese, cottage cheese and sour cream. Add onion and peppers. Set aside. Brown ground beef & drain any fat. Add tomato sauce to ground beef. Grease 9 x 13 inch cake pan or casserole dish, and arrange the following layers: Noodles, cheese mixture, meat mixture - then repeat. Top with grated Swiss cheese. Bake at 375 degrees F for 30 minutes.

One of my family's fav. casserole is w/chicken and stove top stuffing
Chicken breasts in the casserole dish
top w/slices of cheese (we love American cheese)
mix 1 can of mushroom soup & water, pour over chicken
Top everything w/Stove top stuffing.
Optional: Melt 1 stick of butter, pour over stuffing. (I just spray the I-can't-believe-it's-no-butter a few times over it)
30 mins @ 350F
