As in, they were SUPER cheap at the grocery, so I have way too many, and we don't really care for raw carrots. I'm thinking to grate them and freeze 'em . . . for muffins, soups, etc. Will they thaw out okay?

I'm sure I've done this,really sure.......grated, then froze.
Hopefully someone else will know for sure.
Also, mom used to slice them, boil/steam them and add a little brown sugar on top-it was amazing-what a transformation.

I would think that if you are just planning to use them in stuff like a filler that freezing them should be fine. I have never done this but seems like they will be fine.
