a good corn bread/muffin recipe?
 
We're having veggie soup tonight, and I wanna make corn bread not from the box. There are tons of recipes out there, and I just wondered if there was one that was your favorite that you've actually tried. I really would like it to turn out like cracker barrell's corn muffins...yummy!! DD can't have regular milk - so buttermilk is out :(. I'll sub rice milk for regular in a recipe. Thanks for any help!

Not sure how it would taste with rice milk *I use 2%, btw*, but I know sometimes my G'ma makes it with just water! Here is my G'ma's recipe that I LOVE!

BTW, this makes a small pan, so you may want to double it, I do if I make a 8 inch cake pan...

3/4 cup yellow corn meal
2-4 TBLS self rising flour

add milk or water until it's a pretty thin mixture, just not soupy, KWIM?

Bake at 450* for about 15-20 min or until golden brown....I love it a bit browner, cause it makes the outer crispy!!

This is how dh made it the other night. He used the recipe on the back of the corn meal box but only used 1/2 of the sugar & salt but you can omit those completely if you'd like. Some people don't like sweet corn bread. We put some honey butter on it and it was perfect!!

This is actually a recipe from a restaurant that I love.
1 1/4 cups medium-grind cornmeal
1 1/4 cups all-purpose flour
1/2 cup granulated sugar
1 1/4 tbsp baking powder
1 tsp. salt
2 eggs
1 1/2 cups milk ( you could probably sub with water)
1/4 cup vegetable oil
1/2 cup diced fresh jalapeno peppers
1 1/2 cups shredded cheddar cheese

1. Sift cornmeal, all-purpose flour, sugar, baking powder and salt into a bowl. Blend eggs, milk and vegetable oil. Stir into dry ingredients. Fold in jalapeno pepper and cheese. Batter should be thick. Let stand 1 hour.
2. Spoon into mold, other heavy baking pan or a cast iron skillet. Bake in a preheated 375*F oven until firm. Baking time will vary depending on pan and its size. Allow 25-30 minutes if using a 10-inch cast iron frying pan.
3. Let cool in pan. Slice into wedges and serve.

I don't have a favorite recipe (and I've never eaten at cracker barrell, can't help there lol) but just using blue cornmeal instead of yellow makes a tastey cornbread :)

I make mine with almond milk and it turns out SOOOOOOOOOOO good!
