This is a pretty good recipe from the Food Allergy Survival Guide.

Great Gluten-Free Pizza Crust

10-inch regular crust or 12-inch thin crust:
1 1/2 c Jo's Gluten-free All-purpose flour mix (I'll put that after the crust recipe)
1/4 c quinoa flour
1/4 c chickpea flour
1 tsp xanthan gum
1/2 tsp baking powder
1/2 tsp salt
3 Tbls olive oil
1/2 c water

12-inch regular crust or 10-inch thick crust:
1 3/4 c Jo's Gluten Free All-Purpose Flour Mix
1/4 c quinoa flour
1/4 c chickpea flour
1 tsp. xanthan gum
1/2 tsp baking powder
1/2 tsp salt
1/4 c olive oil
2/3 c water

Preheat the oven to 425*. Liberally oil one 10-inch or one 12-inch pizza pan, set aside. Combine flour mix, quinoa & chickpea flours, xanthan gum, baking powder & salt in a large bowl. Stir with wire whisk until evenly mixed. Stire in oil using a fork, then work it in with fingers. Pour in the water and stir until all the liquid has been absorbed. The dough will be slightly sticky. Form into a ball.

Place the ball in the center of the prepared pan, and pat and press it into a circle, about 1/4-inch thick, except at the edges, which should be about 1/2-inch thick to contain the sauce & toppings. Be sure to patch any tears. Bake 10 minutes. Cool. Fill with your desired sauce and toppings. Then bake 25-30 minutes or until the edges are golden brown.

Jo's Gluten-Free All-Purpose Flour Mix
3 c. potato starch or tapioca starch
2 c. chickpea flour
2 c. brown or white rice flour
1 c. arrowroot starch

Place all ingredients in a large bowl and stire with a dry wire whisk until evenly combined. Store in a sealed, airtight container at room temperature or in the refrigerator. Shake the container well before using in case any ingredients have settled.
