Wanted: Homemade Broccoli Cheese Soup Recipe
 
I am looking for a healthy (relative word here) recipe for Broccoli Cheese Soup. It is one of my favorite soups but the only recipe I have for it calls for Velveeta Cheese. I want a recipe that doesn't have processed cheese or cream of something soup.

Anyone got a yummy one?

I would be interested in one, too! My boyfriend hates soups because they are too soupy (he says he doesn't want to drink his food), but he will eat broccoli cheese soup because it is thicker...

My grandmas Cheddar Broccoli Soup

4c. fresh broccoli chopped
1c. cheddar
1c. american cheese
1/4 stick margarine
1/4 c. flour
1 1/2 c. cooking liquid from broccoli
1 1/2 c. milk
1-4 tsp of hot sauce (optional and depending on how hot you like it)
salt and pepper

cook broccoli, drain, save 1 1/2 c. of the liquid. Melt margarine and flour gradually until it forms a paste. Add broccoli liquid and milk, stirring constantly until it thickens. Cut cheese into small squares and add gradually stirring constantly until melted. add broccoli hot sauce, salt and pepper.

Ive gotten away with using 1c of cheese before when I ran out, it's still as good. Ive used all kinds of cheese too-parm, munster, swiss, etc.

ETA- you can use skim milk, lowfat cheeses, good-for you margarines, etc, this recipe is very forgiving.

really just until it is thick enough, and all the cheese is melted. :goodvibes: Doesn't really need to cook, just melt :giggle:

hmmm...never tried carrots. :headscratch: you could try it! let us know how it is :)
