how/when to transition from 1st foods purees to 2nd/3rd foods and beyond

DS is just over 6 months. He's been on Earth's Best Organic 1st food purees for about 3 weeks. He's had apples, pears, sweet potatoes, bananas, and peas. I'm wondering how long he should eat these before we move to 2nd foods with mixes of fruits and veggies? Also, when is it okay to start doing chunks or mushed up versions of what we are eating? How do you start transitioning from purees to real food?

Also how much and how many times a day do you feed food? Right now DS downs about 28 ounces of breast milk a day. He's not acting hungry after a bm feeding, but eagerly eats every single bite of food we've given him. Right now he gets about one 2.5 ounce jar (we worked up from a few spoonfuls) after his evening feeding (about an hour before his last feeding and bedtime).

Thanks!
