Like Mindful Mayo,

Anyone have a good recipe for this?

I don't have a recipe exactly but I have winged it before. I used cannelloni beans in place of egg and used minimal oil in my vitamix till I achieved the consistency I wanted.
Just add a little mustard powder, lemon juice, white pepper, and a splash of white vinegar.

Sorry I don't have something more specific but my parents were really pleased with it.

My daughter is extremely allergic to chicken eggs (she is also allergic to chicken, white potatoes and soy, too). Somewhere we found the usually a person can tolerate duck eggs in place of the regular chicken ones. Finding them is not always easy. If you have a large chinese grocery they may have them but verify they are fresh eggs and not fertilized ones with babies inside. I make mayonnaise for a regular recipe but know that it will not keep very long because of no preservatives. I was fortunate to find someone with a pet duck that lays about 1 per day and the owner doesn't use them.
