UPDATE ~ Pancakes...here we go...
 
I have 8.5 cups of milk that went bad out of the last gallon thanks to STBXH not taking his lunch regularly :banghead:

So what do I do with it?... PANCAKES...

I'm doing plain pancakes, pumpkin pancakes, and any other pancakes I can come up with to use up this batter. I don't even own a bowl big enough to mix the base, so I had to go find a food safe bucket to be able to mix it. :giggle2:

This will probably take a while...

After several days I finally finished (I had to take breaks because I can't stand in front of the stove for very long) I ended up making the batter in a cooler because my bucket didn't work out. I ended up with 239 pancakes (2"-4" across)

Waste not, want not :giggle:

So the bucket I wanted to use didn't work out so well and I had to mix this up in a cooler :giggle:

I've made it part way through the batter and have 72 pancakes so far. I have 12 cups of batter left... man, this takes forever...

How about muffins or other quick breads?
I would go to allrecipes.com and do an ingredient search for sour milk or buttermilk.

I would love to know how to make pancakes from scratch. I buy the just add water kind because I mess bisquick up.

1c flour
3 tsp baking powder
1/2 tsp salt
1 c milk
1 tbs sugar
1 egg

Mix it all up.....some lumps are ok....and cook like the instant kind.

You can mix all the dry ingredients ahead of time a large jar (i use old mayo ones, lol) and then just add the wet ingredients and shake to mix when u want to cook them! I always have 3 to 4 jars of the premixed dry ingredients ready to go!

This is the recipe I use, only I usually double or triple it and add vanilla extract and cinnamon, but it is a great base for other kinds of pancakes.

I did not know sour milk could be used for pancakes!! I will definitely remember this for the future! I did know that pancakes freeze very nicely.
