I need some help mamas! I've decided to go vegan, I think it will be a better health choice for myself. Personal choice, my DH and kids aren't interested in it. So I need some help with what foods to eat and cook with. Can somebody help me out?

What kind of food help are you looking for? I think good cookbooks are a great start. Vegan with a Vengeance and Veganomicon are both excellent. They give good advice on basic food prep (like ways to cut and cook tofu/tempeh... or making beans from scratch). Another cookbook I really like is Chloe's Kitchen. The recipes in there are really traditional and they are delicious! They are accessible to everyone.

I really like Appetite for Reduction (same author as Veganomicon, etc.). I'm not vegan but I just really like the recipes. They had it at my library- you should see if yours has any of these books and if they have recipes you like.

The Vegan Sourcebook is a great place to start.

I eat a lot of hummus, rice, beans, granola, nuts, baked tofu, and smoothies (vega vegan protein powder is great!)

Coconut milk is great in cereal. Daiya dairy free cheese is a great treat (it makes awesome grilled cheese) coconut milk ice cream is another great treat.

Most baked goods are easily made vegan by using nondairy milk and replacing eggs with banana, ground flax, or applesauce.

I put nutritional yeast on everything, I especially love it on popcorn or kale chips.

A couple of months ago my family made the switch, and surprisingly my dh is on board and doesn't complain about the no meat. He eats it when we have family parties at other people's houses. At someone's advice on this forum, I checked out some cookbooks at the library and then ordered a few that I really liked. So far I have Chloe's Kitchen, Happy Herbivore, Vegan on the Cheap, and The Vegan Table. I like to cook from scratch and not rely on fake meats and substitutions, so these books have worked out great. A lot of things you could make and then add meat later for your dh or kids. I cooked up the rest of the meat in the freezer and portioned it out and refreezed it for my dh so he could add when needed. So far, he hasn't used it. I am kinda pushing for him to eat it just to use it up so it doesn't go to waste. You might find your family likes your meals and doesn't require as many animal products. We eat such a variety and it seems like we hardly repeat any meals.

Also, we have a rating system that I write in my cookbooks. Dh rates the recipe between 1 and 10, and anything above 6 can be repeated. It surprises me what he rates high and what he rates lower.
