Help! I need recipes that involve EGGS!!!
 

We have 8 hens, who have only been laying for about a month or two. We have been getting about half a dozen a day. I'm running out of options here with recipes! I would really LOVE to get recipes that have nothing to do with breakfast or egg salad :dontlikeit: :thumbsup:
I think everyone's getting sick of that :blush:

Any dinners? I have a couple but would love to hear more

You can freeze eggs?

Lemon Meringue(sp?) Pie uses a TON of eggs.

Old fashioned pound cake. I use the traditional

I have a scale so I weigh but also added approximate measurements.

1 lb flour(2 1/4 cup)
1 lb sugar(2 cups)
1 lb butter(4 sticks) not margarine
1 lb eggs (usually 10)

I also add 2 tsp vanilla

Sometimes instead of vanilla

I add poppyseeds, lemon zest, and 2 tsp of lemon extract.

Once I added 2 tsp almond extract and topped with almond slices before baking.

We make lunches with them by scrambling with salsa and cheese. My kids will eat that on tortilla chips any day.

I am in the same boat. We try to give away as many as possible. Bread pudding is delicious and uses a lot of eggs. I've been making a lot of nana bread too. It's hard to find stuff that isn't breakfast or desserts/baking. I bet you could use a whole bunch in an angel food cake. Before we moved I gave them to a friend and her husband would drink them raw, he said they were the best raw eggs he ever had :yuck:.

frittata or quiche. use leftover pasta and add beaten eggs, cheese and herbs, then make in the skillet. We love this!
