Help! I need recipes that involve EGGS!!!
We have 8 hens, who have only been laying for about a month or two. We have been getting about half a dozen a day. I'm running out of options here with recipes! I would really LOVE to get recipes that have nothing to do with breakfast or egg salad :dontlikeit: :thumbsup:
I think everyone's getting sick of that :blush: Any dinners? I have a couple but would love to hear more |

I have a scale so I weigh but also added approximate measurements. 1 lb flour(2 1/4 cup) 1 lb sugar(2 cups) 1 lb butter(4 sticks) not margarine 1 lb eggs (usually 10) I also add 2 tsp vanilla Sometimes instead of vanilla I add poppyseeds, lemon zest, and 2 tsp of lemon extract. Once I added 2 tsp almond extract and topped with almond slices before baking. |
We make lunches with them by scrambling with salsa and cheese. My kids will eat that on tortilla chips any day.

I am in the same boat. We try to give away as many as possible. Bread pudding is delicious and uses a lot of eggs. I've been making a lot of nana bread too. It's hard to find stuff that isn't breakfast or desserts/baking. I bet you could use a whole bunch in an angel food cake. Before we moved I gave them to a friend and her husband would drink them raw, he said they were the best raw eggs he ever had :yuck:.

frittata or quiche. use leftover pasta and add beaten eggs, cheese and herbs, then make in the skillet. We love this!
