Banana Recipes
 
I have 2 overly ripe bananas that I need to use up tonight. Give me some recipes for what to make! I could do bread, but that's what I always do, so other ideas would be nice! Maybe pancakes or something? =)

If you have any leftover pumpkin you could do banana pumpkin chocolate chip muffins!

banana ice cream. slice them and freeze until solid. The put them in the food processor and process until you get the right texture. it takes a little time to get it right, but it will get the consistency of ice cream. Watch it carefully because it can go for ice cream texture to too smooth pretty quick.

We make banana pancakes all the time http://www.mybakingaddiction.com/banana-pancakes/ we mix half wheat and half white flour and i use brown sugar instead of white.

If you have sweet potatoes you can make sweet potato casserole with them. Mash cooked sweet potatoes put in baking dish, slice bananas and layer on top. Sprinkle with a little brown sugar and dot on a little butter if you like (the butter is not needed but it is good) and a sprinkle of cinnamon. Then bake at 350 until the bananas are browning and bubbly. Very good- its a diet sweet potato casserole recipe since you only use like 2 tablespoons of sugar.
