I can't say enough good things about Gina's recipes. I've been using her site for meal planning for the last year and everything I've made has been amazing. DH even likes it and has no idea he's eating healthy.

Some of our faves are:

Chicken and White Bean Enchiladas with Verde Sauce
Warm Pasta Salad with Zucchini and Corn
Crock Pot Santa Fe Chicken
Loaded Baked Potatoes

I could list more. They're all so good! I'm trying two new recipes next week.

Those are tasty! I've made them before. The chicken is also really good over a baked potato.
