My friend is having a c-section and I'm trying to think of a few freezer meals to make for her. She is of Mexican origin so I want to avoid any fake Tex-Mex food as I'm sure her family will be better at it than me. :)

Any tips or favorite recipes? I'm generally a very simple cook.

I'm sorry I'm not going to answer your question directly, but I wonder if you live close enough to bring something fresh? After being in the hospital, my greatest joy was fresh fruit salad, a freshly prepared green salad with feta and olives with a simple dressing and a pot roast with carrots.

I myself turn to lasagna when I want to give food as a gift.

When I had my DD, a few of my friends brought us over meals. Here were our favorites:

Spaghetti casserole, roasted green beans, and Oreo brownies (SO good!)
Deli tray, cheese tray, veggies, and fruit - This was nice because I could make up a quick lunch.
Chicken and rice, salad, and bread

I do live close enough, but we are actually more work colleages than close friends so I will most likely not visit her in the hospital or even after baby is born. I just know that she has limited help the first few days so I wanted to do something to make it easier before she went on leave.

I always turn to sloppy joes, that way it can be frozen for future use if the person is overwhelmed with meals. Add a simple side like carrot/celery sticks with dip, mac and cheese, potato salad, something like that. Be sure to include rolls and a dessert- doesn't have to be fancy, but it's nice when everything is there.

Following to find out as well. With DS at three months it can be a challenge to get dinner on the table. If I had a few meals prepared it would be so easy. Someone brought us lasagna and that was nice, but I would love a few more recipes since it takes us a week to eat an entire pan :)

Pretty much any soup or casserole. I wanted to freeze meals before having my baby and DH for some reason didn't like that idea. We freeze chili though.

I always think of dinner ideas, but a previous poster mentioned the deli tray and I remembered my husband's work gave us a deli tray and it was SO nice to make quick lunches for me/hubby. I don't usually think of that but it really was nice!

I made these a week before my due date and they certainly came in handy. Some taste better than others but I'm sure at least one of these would be helpful?

Quiche and fruit.
spaghetti
Chicken casserole
Chicken pie
Stir fry
???

Schedule a day and take her something fresh. I always enjoyed that most. And home cooked is Always my fave. We got brought takeout and meh. I appreciated it, yes, but it always tastes so much better when you know someone put their time, effort, and heart into it.
