Soup

What is your very favorite, tried and true soup recipe? Vegetable, potato, seafood, lentil, whatever. :)

Creamy Potato Leek. If you're interested, I can share my recipe but there are many out there. Mine is from Cooks Illustrated and does not require cream.

Re: Soup

Bean & ham. I remove some of the soup base and thicken it like you would gravy, then return it to the rest of the soup. I also add pepper, fresh garlic, and chicken granules in addition to the seasoning packet that comes with the beans.

Potato soup using left over mashed potatoes (which I make using 2/3 russet + 1/3 sweet potatoes), butter, milk, ham, peas, chives, cheese, sour cream

Black bean with fridge veggies. I'll share if there's interest. It's a lot of words for 11pm :giggle:

I also drool for pioneer woman's broccoli cheese soup, her recipe is spot on.

Re: Soup

There is a Leek and Potato soup that everyone in the family loves. I can't eat it now because it requires cream and butter. I'm going to have to figure out how to recreate it without. If you want the recipe I can type it up. I started with a base from a book but I totally changed it so I'll have to type it out.

The other is a lentil soup that everyone here is just crazy for. http://www.food.com/recipe/red-lenti...us-soup-115423 It is really pretty simple and even when my boys don't want veggies they still love this. I leave out the couscous now because I can't have gluten. We just love this.

I also have some favorite Butternut squash and Pumpkin soup recipes. We eat a ton of soup.

^^ squash soup is so wonderful! I always saute an apple with my onion and it adds a nice fresh taste to the finished soup.

Re: Soup

Cheeseburger Soup. :drif: But did you want meatless soups? Weight Watchers zero calorie cabbage soup is also super good.
