aack! overcooked milk
I put a quart of milk on the stove on low to heat for making yogurt, and went upstairs to fold laundry. Didn't set a timer because I was sure I would remember to check on it. Riiiiight. When I finally got back to it, an hour or more later, it had separated into a whey-like liquid and a cheese-like solid. What can I do with this stuff??

Gosh. I don't know. Did you accidentally make cheese? You could eat it I guess. I am looking forward to making cheese and yogurt when we get goats in a year or two.

I do think it probably was some kind of very basic cheese; I ought to look in my cheese-making book and see if it says anything about it. I took a tiny taste, and it didn't taste bad, just kind of bland - maybe kind of like ricotta. Anyway, it's all academic now. I left it out to cool, went to put the kids to bed, and completely forgot about it until coming down this morning (do you sense a trend here??) so I tossed it.

In order to make cheese, you'd need to have added enzymes before heating, but you probably started the process on some basic level. Who knows, maybe that's where the early invention of cheese came from! :) Cheese making is tons of fun though. If you want to get your feet wet, google "microwave mozzarella recipes". There's lots out there, and the citric acid and rennet are not too hard to find.
