What to do w/ 17 lbs. lean hamburger?
 
I just bought about 30 lbs of lean hamburger. I divided up alot into 2 lb freezer bags, flattened them so they will thaw easily and they are in the freezer.
Now I am wondering what I should do w/ the other 1/2 of the meat?

Should I season any before I freeze it?
Does it need to be browned before I season and freeze it?

Is sausage best made from Pork? Or can I season some of this to use in quiches?

Any ideas would be great.

you can brown some and then freeze it. it can be used for any recipe that calls for browned meat.

you can also make some meatballs (for spaghetti and meatballs)and cook them, then refreeze it. (love this recipe) this is convenient on nights you are rushed to make dinner.

You can make albondiga soup - a mexican meatball soup http://www.elise.com/recipes/archive...digas_soup.php

PIcadillo (taco meat) add peas, small cubed carrots, potatoes and cilantro with taco seasoning and fill in taco shells.

We love Mexican food. We go out once a month for dinner and that is always what we choose.
I just bought taco shells the other day....just for kicks and now I can use the other suggestion you gave too.

3. seasoned taco meat
Any of these cooked then frozen will put together a quick weekday meal.

bare w/ me.....
brown up the meat, add for instance taco seasoning then freeze?
make chili today or tomorrow and then freeze it? or just brown up meat and add the proper seasonings, freeze that & then when I need it add it to beans?
Can you freeze cooked beans?

Is there any point to seasoning the raw meat then freezing that?

Here is what i would do:
Get all your ingrediants and set aside several hours and make and cook the meatballs, the taco meat, chilling ,etc. all at once. Then put in freezer safe(serving size or family size servings) bags or containers(not glass). Don't forget to mark them as to what they are.
For chilli-beans and all will freeze well. Chilli to me actually tastes better after it has been frozen.

Found the chili recipe:
It is from yahoo group member margo:
"here is my chili recipe - perfected over the years - lol ;)
Mom's chili VERY TNT :)

3# ground beef
1 large onion, diced
chopped peppers (banana or pepperocini) to taste
2 cans stewed tomatoes with sauce, cut up tomatoes
2 cans dark red kidney beans, drained
2 cans pinto beans, drained
1 large (16 oz) can tomato sauce (add'l 8 oz can if needed)
1 tsp salt
1 tsp chili powder (or to taste - I use a lot less!)
tobasco sauce - to taste (I use 2-4 drops)
2 bay leaves

In colander, over glass bowl, brown hamburger in microwave on
HIGH - 4 minutes. Stir, add onion and peppers. Cook 3 minutes
at a time and stir until hamburger done (10-12 minutes total
usually.)
Meanwhile, add everything but bay leaf to large pot or dutch oven.
Add meat, stir together, and put bay leaves on top
cook medium heat until bubbling, sitrring occasionally.
Lower heat to 2-3 on scale of 10. cook 1 1/2-2 hours, stirring
occasionally.
(Don't forget to take bay leaves out when stirring!)
Remove bay leaves to serve.

Anyway, this makes a LOT and the weather turned nice the next
day (not chili weather at all), so I put the "leftovers" into a
freezer bag, pressed out as much air as I could and put it in our
chest freezer - that was 2/7/03. We thawed and ate it on 5/6/03
which as a cold, rainy blustery day (perfect chili weather) and it was
even better the second time around.
As you will note all the beans etc are canned - maybe they freeze
better that way than if you make them from dry yourself .....

Thank you Betty_Joanne for all the time you put into helping me (other's too I hope.)
I never thought of browning meat in the micro. That will help alot.
We've got lots of cold & blustery around here. You saved the day.
