Help!! I need a healthy receipe!!!
I'm going to a LLL meeting tomorrow and I'm supposed to bring a healthy snack. The library will only let us bring "baked goods" so it needs to be something that isn't gooey. Any help would be greatly appreciated as I can't think of anything!!!

Low fat cranberry orange bread! It only uses a little bit of oil and egg whites.

* 2 cups all-purpose flour
* 1 1/2 tsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp salt
* 1 cup sugar
* 2 tbsp canola oil
* 2 egg whites
* 1 tbsp orange zest, finely chopped
* 3/4 cup orange juice
* 1 1/2 cups fresh cranberries, chopped
* 1/2 cup walnuts, chopped

Preheat oven to 350 degrees.

Spray a 9 x 5-inch loaf pan with nonstick cooking spray.

In a medium bowl, stir together flour, baking powder, baking soda and salt. In a large bowl, beat sugar, oil and egg whites, mixing well.
Add orange zest and juice. Gradually beat in flour mixture until thoroughly blended. Fold in chopped cranberries and walnuts. Transfer to loaf pan and bake for 1 hour or until a toothpick inserted in the center comes out clean.

Yields 1 loaf (12 slices)

Per Serving: Calories 187, Calories from Fat 29, Total Fat 3.1g (sat 0.4), Cholesterol 0g, Sodium 220mg, Carbohydrate 36.4g, Fiber 1.2g, Protein 3.1g

I made it and it looks and smells wonderful. I'm having a hard time saving it for the meeting!!! Thanks again!!

Mexican cornbread muffins

1 box jiffy cornbread mix - make as directed on box
1/2 can cream corn
2 cups shredded cheese
1/3 cup chopped chilis

Combine and bake at 350 for 20 minutes.

My kids LOVE this
