Anyone have a good PARSNIP recipe?
 
Don't you just love DS! I just love being able to go to you gals when I need a recipe or help or anything....what a blessing DS is to me, anyway....I bought them and want to yummy healthly recipe for my family tonight, we are cooking steak outside in the smoker in the snow! So something to go with that!

Probably too late to help... but maybe next time!

My MIL serves them sliced up longways with carrots, steamed, and with a bit of butter.

I only eat them roasted, just do them like you would roast potatoes. I love having a mix of roast veggies, squash, carrots, parsnips and 'taters (potatoes to the uninitiated:-))

I just made a carrot and parsnip side dish last night. I slice them and then saute them in a little olive oil and thyme until soft. We eat them like french fries- delicious!

1 - chop into matchsticks, toss with olive oil, salt, pepper, and bake like french fries

2 - make a root veggie mash - steam parsnips, carrots, turnips, potatoes even and then whip up like mashed potatoes!

Oh wow, these are all just great, can't wait to try them more often....I ended baking some with potatoes that night, with yummy herbs and then the other night I made an awesome dark beer cheese soup and put them on cubed up with carrots, celery, and chicken! I have more though and I will be trying one of these ideas, THANKS SO MUCH MAMAS!
