Surprisingly good chicken sandwich fill
 
Let me preface this to say that I cooked some chicken one morning to make chicken salad sandwiches that evening, during the heatwave recently, only to discover I wasn't going to have enough chicken.....mind you we have a big family even with the oldest boy gone at the time, 9 mouths to feed. WELL, my dear dear husband comes to the rescue! My former full time single parent husband had a solution that I thought was nuts until I tried it! If you ever need to stretch out that chicken for a sandwich, cook up a pack chicken flavored ramen noodles and add it in with the chicken, mayo/salad dressing, diced green onions, bit of garlic and onion powder to flavor, and PRESTO! Awesome chicken salad sandwich filling!! The kids ask for it now on a regular basis now that we're doing weekly meal planning. Anyway, tho't I'd share that one with you ladies :goodvibes:

Do you use the whole packet of ramen seasoning? It seems like it would make it salty. That's a great idea though, thanks!
