Anyone ever cook carrots in the oven like sweet potatoes?
 
I decided to stick a carrot in the oven (wrapped in foil) to see what would happen because I was cooking something else anyway and it was TASTY. :mrgreen: And DS, who normally doesn't each much, ate almost the whole carrot. It makes them really soft and they cook way faster than boiling them. (And I imagine it probably keeps more of the nutrients in than boiling does.)

Anyway, if you haven't tried it, try it! Especially if you have a picky toddler...they might actually eat it like DS did. :giggle:

Sounds delicious but DD doesn't eat ANY vegetables cooked and especially orange cooked veggies lol...she's an oddball.
