What's your favorite vegetarian/vegan recipes?
 
We recently switched to a vegetarian/vegan diet, but I'm having a hard time coming up with some good recipes. I've gotten a few cookbooks that I'm trying out recipes, but I'd love your favorite recipes.

I'm not vegetarian but I have recently started making at least 1 veg meal a week to help with food costs.

So far I've LOVED these recipes when I really didn't think I would.

I just cook normal things but try to throw either soy ground, lentils or strained beans into everything I make. My kiddos have gotten used to it ;) Like I'll make green bean casserole, but throw regular beans in too, or I'll make quiche with soy ground. Or rice, beans and some sort of veggie. One of my favorite quick recipes is faux tacos, get some corn chips, shredded lettuce and shredded cheese, avocado, tomatos, throw it all together on a plate and then cook kidney beans in the sauce until it's hot, and when you pour it on top of everything it makes it all gooey. Or lasagna, with beans. If you haven't noticed, beans is a staple for me :giggle: Pretty much anything you can make with meat, you can sub some sort of veggie or soy protein in pretty easily.

Soy is good but I worry sometimes about the photoestrogens, so I try to use beans instead. I've found that either beans cooked from bulk, or well rinsed canned beans, don't have an overpowering taste so you can throw it in with anything and it doesn't change the flavor too much.

I have so many! What are you looking for exactly? The Vegetarian Mother's Cookbook is soo good, definitely get that.

Also some dinners we love:

Easy Stir Fry

toasted sesame oil 1 pkg. seitan strips or tofu
vegetable oil Sauce: (or use bottled)
thinly-sliced onion 2 cloves garlic
stir-fry vegetables such as: 1 Tbsp gingerroot
cabbage 3 Tbsp rice vinegar
carrots 2 Tbsp broth or water
bell peppers 2 Tbsp soy sauce
baby corn 2 Tbsp hoisin sauce
mushrooms
snow peas Serving suggestion: brown
broccoli rice and frozen egg rolls
frozen mixed veggies

1. Combine oils in skillet and heat on med-low.
2. Chop vegetables and add to skillet, one at a time until crisp-tender.
3. Add seitan strips and sauce ingredients.

Layered Mexican Salad

8 cups mixed baby greens
1 1/2 16-ounce cans black beans, drained
3/4 cup red onion, chopped
3/4 cup green bell peper, de-ribbed, seeded, and chopped
18 ounces frozen whole kernel corn, thawed
3 tablespoons salsa
18 tortilla chips, crushed
1 1/2 cups Cheddar cheese, shredded
1/4 cup Ranch dressing or salad dressing of your choice
1/4 cup low-fat sour cream

Serving suggestion: cheese quesadillas (grilled cheese sandwich with tortillas instead of bread, with salsa

In a 9x9-inch casserole or baking dish, spread mixed baby greens. Top with drained black beans. Add onion, bell pepper and corn. Add salsa and tortilla chips. Combine sour cream and salad dressing; spread over top; smooth edges to seal. Top with shredded cheddar cheese. Cover and refrigerate all day or overnight. Serve chilled.

Salad Nicoise and Avocado Yumwiches

1 head red leaf or Romaine lettuce Avocado Yumwiches:
2 medium tomoatoes, diced 12 slices whole wheat bread
2 eggs, hard-boiled and diced 1 1/2 avocados (or cucumber)
12 oz. extra firm tofu, flavored, chopped 3 oz. low-fat cream cheese
1 can green beans 6 slices tomato
1/2 small red onion, finely diced
10 new potatoes, cooked and quartered
sliced olives (optional)
1/2 cup vinaigrette

Serving suggestion: bowl of baby carrots and cherry tomatoes

In a large bowl, place all ingredients except lettuce; toss well. Set aside for 10 minutes while you prepare the lettuce and the sandwiches. Tear lettuce into the bowl on top of your marinating mixture, and toss well.

Serve with Avocado Yumwiches. For each sandwich use 2 slices bread, 1/4 of an avocado sliced, 1/2 ounce cream cheese, and one slice tomato. Put together and eat!

Thanks for the recipes!! I'm looking for recipes with beans and lots of veggies. I'm not ready to try tofu. Mexican, soups, casseroles, really anything that's yummy!

Rice balls! I'm not sure there's a recipe. Just sticky rice with filling. Like today we ate em with avacado, cucumber, cream cheese w/ dill and garlic. Yesterday we had em with no dill or garlic. They are so good. :thumbsup:
