Gluten, soy and dairy free items or meals
 
So, I have had to go gluten, soy and dairy free while nursing my little one. I've found I can have:

Veggies - no cabbage
Fruits- not from a can
Meat
Seafood
Beans
Eggs
Nuts
Rice Chex
Potatoes- W/ out butter
Lays Baked Chips
health food store bread mixes or cookie / brownie mixes
Mayonnaise
Coconut oil in place of butter

Does anyone else have this diet? What meals do you have? Is there anything else you eat that I haven't realized I can eat?

I can think of chili and some barley soups... and then different salads for dinners.

I'd appreciate any and all ideas.

grits, cornmeal, cornbread (make it yourself--use ricemilk or other sub for milk), plain corn tortillas (use masa and a tortilla press for the least additives), sweet potatoes, squash/pumpkins (and their seeds--yummy roasted!), white, brown and wild rices, millet, quinoa, amaranth, teff (similar grain).

you shouldn't use barley, it has gluten as it is a close relative to wheat--same with oats, kamut, rye and triticale.

some meal ideas:

chili with baked potatoes
stir fry with rice (use a wheat-free tamari such as San-J has) and your choice of meat
split pea soup
potato/veggies roasted with your choice of meat
corn tortilla-based enchiladas or tacos
hot cereal (such as quinoa) with eggs and fresh fruit
quinoa or brown rice pasta with your choice of veggies/meat in the sauce

Thanks for all that great info Christine! I have millet on hand, but I've never known what to do with it other than grind it and make baby cereal. Would you maybe try it in soup?

absolutely! :) it has a great texture for soups.

more thoughts:

chalupas with corn tortillas as the base
fajitas with corn tortillas
stuffed/baked bell peppers (meat/rice/sauce) or tomatoes
wild rice with portobello mushrooms as a side dish
sweet potato fries
lasagne using zucchini slabs instead of wheat noodles--stuff with blended cashews or navy beans, veggies, spinach, etc.

I really like the idea of the stuffed bell peppers. It's is a meal I can have that I make normally anyways but just didn't think of myself. Thanks again.
