I"m tortilla soup inept, I can't figure it out to save my life, anyone have a good tested recipe to share?

I made this for dinner (for the first time) last night and we all loved it. I used Doritos instead of baking corn tortillas, but I'm sure it didn't affect the taste. I hope you like it.

I posted this one on the crock pot thread...you can make it in a regular pot on a stove also if you don't use a crock pot much:

Super Easy Chicken Enchilada crock pot stew:

2 cans chicken broth
2 cans water
1/2 cup Masa Harina
3 cans white breast chicken meat, don't drain *
1 can Green enchilada sauce
2 cans black beans
1 can ro-tel tomatoes
2 cans corn
2 tsp. cumin
1 dash cayenne pepper
salt and pepper to taste
1 lb velveeta cheese, cubed

Combine broth, water and masa harina in crock pot and stir until lumps are mostly gone or gone. Than add the rest of the ingrediants except cheese and let cook on low for 6-8 hours or on high 3-4 hours. Add cheese approx. 30 minutes before serving to melt and then mix into stew. I serve in bowls with crushed tortilla chips, shredded cheddar cheese, a spoonful of salsa and a dab of sour cream on the top. If I have fresh cilantro I add some of that freshly chopped to the top also.
* You can substitute your own chopped cooked skinless boneless chicken breast meat, of course, about 1 1/2 lbs to 2 lbs.

Serves 6-8 at least, I have four children that are eating solids, lol and a hugry dh and we always have leftovers. :-)

Here is mine...

Chicken tortilla soup
1 pound chicken cooked and shredded
Salt and pepper
1/2 lb chorizo (I like the raw ground kind over the sausage kind)
3 cloves garlic, smashed
1 red bell pepper, chopped
1 medium onion, chopped
6 small red potatoes, cubed
1 (15-ounce) can fire roasted chopped tomatoes
1 (15-ounce) can dark red kidney beans, drained
1 quart chicken stock
1 sack red or blue corn tortilla chips
2 cups shredded pepper jack or smoked Cheddar
Preheat medium soup pot over medium-high heat.
Cook chicken till tender and set on plate to cool, drain broth into seperate pan (I like to cook mine for a couple hours to get it nice and tender, then I can make my own broth instead of using canned). While waiting for cooked chicken to cool, brown chorizo. Add onions,garlic, peppers after chorizo is browned, cook till tender. Add tomatoes, beans, and potatoes to chorizo/veggie mix. Add shredded chicken and broth back to pan. Simmer till flavors combine. Serve with homemade tortilla strips or bagged tortilla chips, sour cream, and cheese. Add hot sauce if it floats your boat.

I just have to rave about this soup for a minute! I made it last Monday, and loved it so much I gave my mom the recipe and she made it on Wednesday. Both of our husbands loved it, and it was SO EASY to make! Well... except the corn tortilla chips- that was a pain in the rear. Next time it'll be chips out of a bag for us, but the soup recipe is definately a keeper!
