grocery budget and special needs diet
 
we live with my mom now, who is a diabetic, and when it was just us, i had our grocery budget down to about 300/month, give or take. we eat lots of basic stuff, rice, potatoes... lots of things she either cant have, or cant have much of, so i dont want to base my meals around that, so that she is eating properly, and i am NOT cooking two meals lol. i need recipe ideas that are not so starchy and also how much could i expect to spend. i generally shop at aldi, and will have to go there monthly, and fill in with fresh things weekly at stores closer to home. (when we moved the closest aldi is 20+miles away)

for budgeting purposes we can do about 400/month.

I would look for recipes online at allrecipes.com or someplace similar that are high protein/low carb...you can do a search for that type of recipe. Aldis has great prices on ground turkey (I have a great recipe for turkey burgers if you're interested), seafood and meat in general, as well as beans and other type of vegetarian protein sources.

On the freebie websites you can find free diabetic cookbooks which could give you some good ideas too. I ordered some to give to my parents because my dad was just diagnosed with diabetes.

Beans and lentils are AWESOME for diabetics and your budget. When DH's mom visits us I do a lot of crockpot roasts, beans, coleslaws, etc. If you buy dried beans/lentils instead of canned you will save big $$$$.
