HELP! Desperate need of RECIPE help for children with allergies
I have a friend IRL. Her children have MANY allergies. She's asked me to help her come up with some new recipes that her whole family can enjoy. They are also on a tighter budget (hence why she asked me:giggle:). Can you all help me come up with as MANY allergy-free (or within her guidelines) recipes as possible? Thank you all so so much!
Here's straight from my friend's email: I am looking for recipes that our entire family can enjoy together. There may be one ingredient that needs to be changed for one person. These recipes can be for treats, meals, or pretty much for any occasion. They must be specific and very detailed including ALL ingredients and measurements. A list of safe foods and/or ingredients and variations of them is provided below. There is also a list of the boys current known food allergies along with fun foods they can eat. Safe Allergy Friendly Foods for Everyone 1. Rice (This includes rice flour, but not rice milk) 2. Potatoes (This includes potato chips, potato flour & potato starch) 3. Corn (This includes corn tortillas, tortilla chips, & corn starch) 4. Chicken (This includes ground chicken & certain kinds of chicken broth) 5. Turkey (This includes ground turkey, turkey hot dogs, & turkey sausage) 6. Banana (Can be used as an egg substitute in baked goods) 7. Cantaloupe 8. Watermelon 10. Plums 11. Peaches (This includes peach preserves) 12. Butternut Squash 14. Barley 15. Sunflower Seeds 16. Cinnamon 17. Onion 18. Paprika 19. Pepper 20. Salt 21. Rosemary 22. Black Beans 23. Tomato 24. Baking Soda 25. Baking Powder (Gluten Free) 26. Baking Soda 27. Vanilla (Gluten Free) 28. Olive Oil 29. Canola Oil 30. Maple Syrup 31. Tapioca (This includes tapioca flour & starch) 32. Oregano 33. I think potatos and chicken (cut in cubes) and roasted with olive oil fresh rosemary salt and pepper (I also use nutmeg but am not sure if that's safe or not) is very yummy, and my kids like it:) Just bake at 350 till eveything is done. Depending on the type of potatos they may need to go in first for up to 30 minutes before you add the chicken.

Chicken w/ a 100% natural BBQ sauce in the crock pot. Cook for 5-6 hours until tender. Add tolerated veggies or rice as a side.

My DD has numerous allergies too, though only eggs and apricots have noticeable and immediate effects as opposed to the delayed effects (skin/eczema) of the other 14 food sensitivities. With DS#2 it is mango that has an immediate effect. There are some really great library books for cooking for allergy sensitive kids. If you are interested pm me and I don't mind backtracking to look up the titles...it was VERY helpful for me.

Roasted chicken seasoned with rosemary, salt, pepper and garlic if that isn't an allergy. Put an orange or two inside the chicken while baking (not to eat just for moisture and flavor). Mashed potatoes and veggies baked with olive oil and seasonings they like on the side.

I found a web site a while back specifically for kids with allergies. Anyone can access the featured recipes on the site, but to get all of them and post on the message boards is $25/yr. Maybe some of the featured recipes will help!

I highly recommend that she get this book. It has recipes as well as a ton of information for multiple allergies.

Heat cooked black beans with salsa (if commercial is not okay, make it from tomatoes, onions, jalapeno, lime juice if that's okay, cilantro if that's okay, pinch of sugar). Serve over rice w/ avocado slices on the side (if avocado is okay).
