Re: help me with breakfast (healthy baked goods maybe)
I make these about once a week or whenever I have bananas starting to go mushy...They are yummy and healthy and my DH and DS both luv 'em.
Banana Nut bran mufffins
3/4 cup of whole wheat flour
3/4 oat bran
1/2 cup brown sugar
1 tsp. baking powder
1 tsp.-ish cinnamon
1/2 tsp. baking powder
2 mushed up bananas
1/2 cup plain or vanilla yogurt
1 egg or 2 egg whites
2 Tbls. oil (canola or melted butter- oil makes em more moist)
1 tsp. vanilla
about 1/2 cup chopped walnuts
Mix wet and dry ingrediants separtely then combine. Bake in muffin tin at 400 for about 18 minutes. Makes 12. Enjoy!
Sometimes I swap the bananas for applesauce (about 1/3 cup or one lil single serving cup applesauce), and about a 1/2 to 3-4 of peeled chopped apples, and pecans for the walnuts. Add a lil extra cinnamon and yum appley nut bran muffins.
I also make granola alot for snacks and breakfast.
2 cups thick rolled oats (not instant)
1 cups nuts of your choice ( almonds, walnuts, pecans are my top picks)
1/2 cup roasted sunflower seeds
1/2 cup roasted pumpkin seeds
1/4 cup wheat germ
1/8-1/4 cup flax meal
Optional- 1/2 cup conconut
Combine this in a big bowl
Set your oven to 300
In a small saucepan melt about 2 tablespoons butter, 1/4 cup brown sugar, about a tsp. of vanilla, a dash of salt and about 1/2 cup honey. stir till its melty and all combined (I do this over medium heat. ) Then pour over oat mixture. Pour onto a big greased pan ( I use the bottom part of my broiler pan but a cookie sheet will work too. ) Bake for 30-35 minutes stirring it around about every 10 minutes. Granola will be a nice golden brown.
Add in a cup or so of your choice dried fruit- our favorite lately is dried blueberries with walnuts. Another I really love is dried pineapple and mango with the coconut and almonds.
Tastes awesome fresh out of the oven but will last for a while in air tight container or big zip-lock. Hope these help!
