[QUOTE=KWinMT;10854397]One word - HUMMUS!! Chickpeas, garlic, olive oil and a few fresh herbs in the blender and you've got a super healthy and yummy spread to dip carrots and spread on sandwiches. I sometimes make a wrap with a whole wheat tortilla, hummus, lettuce and whatever veggies I have - yum!/QUOTE]

Yes, I love my hummus this way!

We eat a lot of beans around here. One way the kids love beans is when I boil them for a couple hrs with garlic salt and cumin. Toss them in a blender until pureed. I put some in a kids bowl, add some shredded/cottage cheese and let them have chips to dip. They think it's a super big treat because they never get chips. Only with 'nachos'. You can always add tomatoes, lettuce, salsa...anything else. I also want to try added pureed veggies to hide in the beans because they devour this meal .
