Buy a package of tortillas - taco size.

Spray a 9x13 inch pan with cooking spray - put a I buy a bag of tortillas - usually use whole wheat - and put a little of the enchilada sauce at the bottom. Then start putting the filling in the tortillas and rolling them up and placing them in the pan - repeat until the pan is full. Pour enchilada sauce over the tortilla rolls (make sure some gets down between the rolls). Bake at 400 for 15 minutes, top with more cheese if desired and put back in oven until cheese is melted (10 minutes-ish).

WE made these tonight and yum! I dont know if I'll make beef ones ever again!
