I have an electronic one that has a little skewer that stays in the meat in the oven and a wire that runs out to a display. That one stays in.

I learned the hard way that the classic meat thermometers, the skewer with the dial attached, sometimes don't survive being put in the oven. So if I use that one, I put it in, test, remove, and return to oven.
