Yummy Pound Cake Recipe
Ok, since it is DH's birthday week, I have been making him tons of baked goods. He LOVES pound cake, and I just made a couple of loaves last night. He took a loaf to work, and it was GONE in minutes. Here is the recipe (that I got off the internet, but tweaked it just a little). I have made this a bunch of times, and it always comes out great!
- 1 1/4 cups + 2 Tsbp. cake flour
- 1/4 t. salt
- 1 t. vanilla
- 1/2 c. heavy cream
- 3 eggs (room temp)
- 1 c. + 2 Tbsp. granulated sugar
- 1 stick unsalted butter (room temp)
DO NOT preheat oven!!
Grease and flour loaf pan.
Sift cake flour and salt together 2 - 3 times so that flour is light and 'unpacked'.
Mix butter and sugar with electric mixer until light and fluffy.
Mix in eggs one at a time, mixing well after each. Beat in vanilla.
Sift in half of flour, mix well.
Mix in heavy cream, mix well.
Sift in rest of flour, and mix on medium speed for 3 - 4 minutes.
Pour (it will be thick) batter in pan and place in cold oven. Turn oven on to 345 and bake for 50 min - 1 hour.
Let cake rest for a few minutes after removing from oven. Slice and enjoy!!
I have to add that this pound cake has a GREAT light texture. It still has the dense-ness of pound cake without being heavy, if that makes sense. It is not too sweet, or heavy, or eggy, which a lot of pound cakes are. And it comes out more white than yellow. BUT you MUST use cake flour!! No exceptions!! People ask for the recipe all the time!! Fresh pound cake with berries and whipped cream = heaven!! I also LOVE to have some with my morning coffee!!
