You can make it with any oil (liquid kind... I wouldn't use coconut or something hard at times like that). I don't pasteurize my eggs. I am not sure how you would do this. I do often use whey though so it will last longer. Mayo made without whey will last about 2 weeks, with whey will last a few months provided you let it sit out for a day or so after you make it.

The recipe I use is from the Nourishing Traditions Cookbook. Here that is...
1 egg yolk
1 whole egg (I use pastured eggs from a local farmer)
1 t mustard
1.5 T lemon juice
good pinch of salt
1 Tbs whey if using
3/4 to 1 cup oil
I put this in a dish with my immersion blender and whip up the egg before adding the oil slowly. I can normally get it as thick as Best Foods/Hellmans and often it tastes very close too. I use sunflower oil.

However you can make flavored mayo's that are just as easy and tasty. I make a spicy one every now and then.
