Flats are just one layer of fabric, a large square that you can fold.

Prefolds are, well, prefolded(in thirds)! Usually having more layers in the middle for absorbancy and less on either side.

You can do many more kinds folds with flats(google or youtube diaper flat folds) than you can with prefolds. Prefolds will take longer to dry as the layers are sewn together, while flats can be opened up to just one layer, so they can dry extremely fast.

I prefer flats, but only because one size fits all, you can fold it down to fit a newborn or a toddler and they come clean so easily and dry super fast. I just like the simplicity of them, but some people can't stand the work of having to fold them.
