Avocado fries! I found the recipe on Pinterest, but basically you cut firm ripe avocado into "fry" shapes, dredge in flour, dip in egg yolk, roll in Panko crumbs, bake for 15 minutes at 450. I serve them with a dip of mayo, cilantro, and lemon juice. Super yummy.
