Would slightly underbaking them help?
Or you could use them as dippers- I know you don't do nuts so no peanut butter, but maybe making some sort of dip to serve them with like a fluffy cream cheese thing, or I know some people mix pumpkin puree with cool whip. Or cream cheese frosting?
Or if you like raisins, you could boil some raisins in a little water and let the mixture cool- softens the raisins and then drain and add in the raisins to the mixture at the end before baking.
