Oooh, I would totally saute some onion and peppers, then saute rice until translucent. Add the bean broth to cook out, then add some of the seafood with maybe basil and then some chopped tomatoes towards to end for some fresh burst. Do you have lemon or anything citrusy to squeeze a touch in at the end for brightness?
That sounds yummy. I would probably add kale or chard or the like to the saute at the end with the seafood.
It would be like a really odd version of dirty rice, haha.
