Re: Freezer Meals
Chili is great. You can make a bunch of it and freeze it in individual containers for quick-grab lunches.
Some other things I make regularly:
waffles - place on a cookie sheet, and separate layers with wax paper. Freeze an hour or so, then place in a ziploc bag.
cookie dough (roll into balls and freeze before placing in a ziploc bag. Super quick and easy)
I make my own enchillada sauce, so I freeze that and shredded chicken (freeze the chicken broth too for soup later!). Thaw out for a day in the fridge and it makes super tasty (and quick) enchilladas.
