I loved having freezer meals right after DS2 was born. Most of the meals were just the extra after making a double or triple batch of dinner. If I was making spaghetti and meatballs, I made a HUGE batch and froze the rest. I found it better to freeze stuff I already knew my family liked than trying new recipes that my picky family may not even end up liking.
Now that I'm not so pressed for time, I just freeze prepped ingredients rather than whole meals. Meatballs, shredded chicken, cookie dough, raw meats in marinades, etc. For example, there's this Korean sauce my family loves. Any time I find chicken breasts, wing or beef ribeye steaks on sale super cheap, I buy them up. Then I separate the meat into single meal size portions and some of our marinade. Leave the bags in the fridge for several hours to start the marinating, then pop them in the freezer. When you're ready to use them, they'll marinate more while they thaw.
