Exp. Canners! HELP. pressure canning pickled beets
My mom and I are canning pickled beets today. I am a total novice and she has some experience.
We got the jars all loaded into the pressure canner, heat on, steam going.... and she asks, "what time/pressure?"
Now, All I can find is instructions NOT to pressure can pickled items. Just use boiling water bath. I hate when someone tells you not to do something, but doesn't explain why. Anyone know WHY?
So she guesses at a time (comparing it to acidic tomato juice, which we did the other day...... 6lbs/20 minutes).
Am I going to be botulized???
