The Vegan Sourcebook is a great place to start.
I eat a lot of hummus, rice, beans, granola, nuts, baked tofu, and smoothies (vega vegan protein powder is great!)
Coconut milk is great in cereal. Daiya dairy free cheese is a great treat (it makes awesome grilled cheese) coconut milk ice cream is another great treat.
Most baked goods are easily made vegan by using nondairy milk and replacing eggs with banana, ground flax, or applesauce.
I put nutritional yeast on everything, I especially love it on popcorn or kale chips.
