You can mix them into muffins for fruit muffins. Use the fruit ones on pancakes or waffles. The veggie ones can be mixed into pasta sauce and meatloaf and then you've added a hidden veggie. Or mix into bread for veggie bread (not exactly the same but I make onion-potato bread all the time). Use meat in pasta sauce or lasagna or as a meat layer in strata or layered veggie or "mexican" lasagna. You can also try making soufle and mixing in the veggies to that, though you'd probably have to go easy on it or it would be too heavy... or just make it a savory baked egg custard. Lots of options for use in casseroles too as hidden veggies or an extra meat.
