It's not the most exciting but an easy super quick way to get the extra protein when you need it is eggs in a muffin tin. You can just crack an egg into each greased spot, bake covered with foil at 350 for 10-15 minutes. You can also scramble the eggs and add whatever fixing's you want for little muffin tin omelettes. I love to have them around for quick bites.
