english muffins question (slow rise)
I have been experimenting with homemade breads lately, and would love to try this recipe for english muffins! Here's the thing: I WOH and have a 1-1/2 YO. See how it's mix, rise, rise, cut, rise, bake? That's kind of a problem.
I was thinking that I could make the dough and do the first two rises one night. Then cut, put them out on a baking sheet, and pop the mess into the fridge for a very long slow third rise. Then, the next day (presumably sat or sun when DD is napping) I will bake them. Do you think that would work? A little bit of sour-ness or whatever in the finished product will not be an issue (will sell to DH as "sourdough english muffins"). WWYD?
