Crock pot! Layer onions, then carrots, then potatoes (or any other raw veggies you like), meat on the very top, and pour in beef broth until it covers about 1/2 to 3/4 of the vegetables. Add seasonings to taste. Serve over noodles or just in a bowl with the broth by itself. if you have a big enough roasting pan, you can do the same thing in the oven. So yummy. That's like our super easy go-to fall/winter recipe around here.
