This is what I do to make a creamy chicken sauce: Finely dice onion (maybe 1/4 cup; optional), saute in 2 tbsp. butter, add 2 tbsp. flour, stir and cook for 1 minute. Slowly stir in 1 cup milk & 1 cup chicken broth (or water + bouillon), bring to boil, reduce heat and simmer until slightly thickened. Add salt + pepper to taste. Stir in cheese if you want it to be a cheesy sauce.
Then I add this to rice or noodles, diced chicken, any other ingredients I feel like using, and bake until hot.
