Hubby makes chili every week & eats it for dinner all week. (Except no longer since he won't be working out of state anymore! Yay!)

He sautes together:
1 onion, chopped
1 bell pepper, chopped
6 cloves garlic, minced

Then he adds
1 1/3 to 2 2/3 lbs. ground beef
and cooks it till it's no longer pink.

Then he adds
1 27-oz. carton Pomi chopped tomatoes
1 27-oz. carton Pomi strained tomatoes
1 jar of Knudsen's spicy vegetable juice
2 10-oz. cans original Rotel
1 batch homemade chili powder (from Joy of Cooking--it's ground chiles, Mexican oregano, cumin, and cayenne, toasted together)
1 to 2 lbs. cooked kidney beans (we use the slow cooker for those)
and lets it simmer for several hours before adding salt to taste.
