The chili I make is from work, do its a massive batch. When I make it at home, it usually so I can freeze a bunch of pass out to friends. Get the big #10 size cans at Costco or a restaurant supplier like Cash and Carry.

3 bell peppers, diced
2 onions, diced
1/4 cup minced garlic
3lbs ground beef
1 #10 can diced tomato (don't drain)
1 #10 can chili beans (these are just preseasoned pinto beans. If you can't find them, use pinto and bump up the seasonings)
3 regular size cans black beans, drained and rinsed
Chipotles in adobo sauce (as much as you want)
12 oz tomato paste
1/4 cup chili powder
1 Tbsp smoked paprika
1 Tbsp cumin
1/4 cup brown sugar
2 Tbsp beef stock base (its a thick paste from the soup aisle. I like Better than Bouillon brand)

Sauté together peppers, onion and garlic just until softened. Add beef. Cook until beef is cooked through. Add everything else. Stir well. Simmer at least half an hour.
