I do the tripling thing a lot and freeze the rest too!

Two books that have helped me are "Don't Panic, Dinner's in the Freezer" 1 and 2. Great info on how to freeze it all and how long.

Rio Rancho Meat (great for tacos, loaded nachos, taco salad)
Southern Ham and Beans
Pinto Beans (great frozen and then can be used for many meals)
Comfort Meatballs by Pioneer WOman (freezes well)
Twice Baked Potatoes
4 Corner's Refried Bean
Monterrey Jack Stuffed Chicken (great with the refried beans and Southwest Rice Bake from DPDITF books)
Chewy Granola Bars by Tammy's Recipes (I modify this recipe, bake a double batch and freeze)
Granola Energy Balls by Marathon Mom (easily changed too) and freeze
Any kind of muffins
Egg Bakes and Pioneer Woman's Quiche Recipe
