When we lived near our pork farm and got bacon every week I would save all our fat for cooking potatoes, especially mashed potatoes, they are soo much tastier with bacon fat an cheddar cheese! I basically would keep it in a cup in the freezer, I'm not sure why I didn't think to keep it in the fridge, lol, that would have been much easier now we hardly ever get bacon because we live in the city and the place we get our pork from is so far away that we save bacon for special occasions.
