My dd is also lactose intolerant. We usually make chicken and dumplings (our recipe does not use butter and we use soy milk for milk). We usually make a thicker version then what is above- saute chopped onions, carrots and celery in olive oil. Add a spoon or 2 of lour, let it cook a minute then add the broth. Add soup veggies. Then add cooked meat. Then add dumplings. We also do chicken pot pie (using what is left over from the chicken and dumplings- I use flour to thicken it a little more). Then dump it in a pie crust and cover with another.
We also do enchiladas- dd's are cheese less. We do ours with red or green sauce (whatever we're in the mood for) not cream like most chicken enchiladas.
We also do shredded barb chicken sandwiches.
And you could just make some chicken soup
