Just baked some awesome semi guilt free brownies!
Shred a med sized zucchini, I peeled it first. And squeeze all the excess liquid out of it over a bowl. Reserve liquid.
To the zucchini add an egg. Mix well.
Add dry brownie mix.
Stir stir stir...add reserved zucchini liquid and stir stir stir.
Keep an eye on consistency and add a tablespoon at a time of milk til reaches proper batter consistency. Mine took about 2-3 T milk. The zucchini liquid in mine measure like 1/8 c.
I then lined a cupcake pan and it made exactly 12 brownie cupcakes.
Can't taste the zucchini
And almost fat free (just that one egg! No oil! And I used 1% milk)
